Ajo Blanco

is a chilled almond "gaspacho type" salad soup, served as a refreshing starter, on a hot day.
Mix in a blender:
One cup of blanched almonds.
1/3 cup of olive oil, 3 to 4 tablespoons of vinegar, and salt to taste.
One large clove of garlic.
One slice of bread.
Add 2 or 3 cups of chilled water.
Serve very chilled with peeled grapes or chopped apple.

Salsa de Almendras

is a delicious almond cook in sauce for, meat balls, fish and asparagus.
Mix in blender:
One cup of blanched, fried almonds.
One cup of crutons (fried cubes of bread).
5 to 7 cloves of garlic chopped and fried.
One cup of white wine and One/two cups of water.
Salt and pepper and parsley to taste. Add azafran if you can find it.
Walla.. "cook in sauce", "listo" (ready)..just add ingredient of choice and simmer.
